Hangover Breakfast Tachos: The Best Breakfast for Hard Mornings

A never ending bike ride. You hit that moment where you have gone too far and somehow, you have to make it home and it’s at this moment that food and drink are critical. These are the circumstances in which I first discovered tachos – that is nachos made with tater tots. I never looked back since. Now top it with fried egg and hand me a bloody Mary and that’s what I call brunch. Make this after a long night or when you are facing a long day.

Breakfast Tachos

Serves 2 hungry people, up to 4 regular sized humans


Ingredients: 

tater tots

1 bell pepper, diced

1/2 onion, diced

1/2 tomato, diced

1 minced Thai chili pepper 

2 cloves minced garlic

1 teaspoon chili powder

2 cups frozen tater tots

1/4 cup Green Pico de Gallo or your favorite salsa

1/4 cup guacamole

4 strips of bacon – chopped

4 eggs

2 tablespoons butter

1 cup shredded cheddar cheese

1/2 cup sour cream

Cilantro, hot sauce, and jarred jalapenos for garnish

Instructions:

  1. Preheat your oven or air fryer to 400 F. Meanwhile, dice pepper, onion, and tomato into similar sized pieces and mince the garlic and chili pepper.
  2. Start frying bacon. I used turkey bacon, but pork or vegan strips will work too.
  3. Once the oven or air fryer is preheated, spread tater tots onto cooking sheet or in basket and season with salt and pepper. Spray with olive oil or cooking spray and cook for 20 minutes, turning once about half way through.
  4. While the tots cook, finish cooking the bacon. Once the bacon is finished, remove from heat and set aside to cool. In the meantime, add 1 tablespoon of butter (if needed) to the same pan and start sautéing peppers and onions on medium heat. Sprinkle with salt and pepper. 
  5. Once the onion begins to turn translucent (about 10 minutes) add the garlic and chili pepper and cook for about 2 more minutes, taking care to not burn the garlic. 
  6. Chop cooked bacon and add to the onions and peppers along with chili powder and give it a good stir. 
  7. Your tots should be getting crispy at this time. Remove them from the oven or air fryer and top them with the bacon, onion, and pepper mixture along with the cheese and put them back in the oven or air fryer for 3-5 minutes. 
  8. Meanwhile, heat the last tablespoon of butter in the same pan you used to cook the onions, peppers, and bacon and start frying your eggs. 
  9. Remove the tater tot mixture from the oven or air fryer and divide them between 2-4 bowls. Top with diced tomatoes, guacamole, sour cream, and Pico and place one fried egg on top of the masterpiece and garnish with cilantro, hot sauce, and jalapenos.
