I have been gluten free since 2009 which was the dark ages of gluten free products, knowledge, or awareness. Everything had a weird, gritty texture and almost all of it tasted like sand. To me, it was inedible. This lead me to develop some of my own recipes, like this gluten free chicken parmesan, but beware, even things that you would think should be gluten free, are not always. One surprise in this category is corn flakes, which should be made from corn, but not all brands are gluten free. If you have a slight intolerance, the malt in these products might not bother you, so to be safe, look for a brand that does not use malt, such as Barbara’s Bakery or Nature’s Path. You could also use Corn Chex for a very similar outcome.
Air-Fryer Chicken Parmesan with Spaghetti
Serves 4

You will need a blender or a food processer to get the cereal milled.
Ingredients:
2 large boneless, skinless chicken breasts divided, or 4 chicken breast cutlets
2 cups of cornflakes
1 teaspoon dried oregano
1 teaspoon dried basil
4 slices of provolone cheese
4 cups of red sauce, jarred or try my dad’s recipe
1 lb of spaghetti
Cooking spray
Chopped parsley and parmesan cheese for garnish
Instructions:
- Preheat air fryer to 400 F. Meanwhile, pound chicken breasts to an even thickness, about 3/4 of an inch thick.
- Add corn flakes, 1 teaspoon of dried oregano, 1 teaspoon of dried basil, and salt and pepper to the blender and blend until it is a fine powder.
- Dredge the chicken breasts in the cornflake mixture, covering both sides.
- Add to pre-heated air fryer and spray with olive oil or cooking spray. Cook for 20 minutes, turning once about half way through.
- While the chicken breasts are cooking, add sauce to a pan with low heat and start boiling the water for the spaghetti, Cook as according to package instructions.
- Remove chicken from air fryer and top with a slice of provolone cheese. Return to air fryer for 3-5 minutes.
- Meanwhile, divide spaghetti to 4 plates and add one chicken chicken breast and top with sauce, parsley, and parmesan.
