Breakfast Hash: The Best Way to Use up Leftover Potatoes

Breakfast is hands down my favorite meal and if I can incorporate leftovers from dinner the night before, I am sold. My breakfast hash does just that. Next time you boil potatoes, make extra so that you can indulge in this breakfast hash recipe the next day.

This is one my recipes that also uses up a lot of stuff in your fridge. It’s kind of like some of my salad recipes, where I know I have vegetables to use up, so might as well throw them in a salad! The result is always good, just like my breakfast hash.

In this recipe, I am using the usual suspects; onions, peppers, garlic, bacon, scallions, cheese, and of course potatoes and eggs. But you could easily add other vegetables you got lying around like tomatoes, top it with avocado, or one of my favorites, brussels sprouts. I know that sounds weird, but for some reason, it just works. So get wild and find out what your favorite combo is!

Serves 2-4. Consider 1-2 eggs per person.

Tools:

I recommend a cast iron skillet to cook the hash.

Ingredients:

1/2 pound of potatoes, parboiled for about 15 minutes and diced

1 bell pepper, diced

1/2 onion, diced

2 cloves of garlic, minced

1 chili pepper, minced

4 strips of bacon

1/2 cup shredded cheddar cheese

1 teaspoon of chili powder

1 teaspoon of cumin

4 eggs

1-2 scallions diced

Instructions:

  1. In a cast iron skillet at medium heat cook the bacon until crispy. Dice and set aside.
  2. In same skillet with the bacon fat (or add oil if needed), add in the bell peppers and onions. Sprinkle them with salt and pepper and allow to cook for 5 minutes or until the onions are just translucent, stirring occasionally.
  3. Add potatoes and plenty of salt and pepper. Increase the heat a bit and add more oil as needed to prevent sticking. Allow those to brown for another 5-10 minutes.
  4. Add the garlic, chili pepper, chili powder, and cumin. Add the bacon back to the pan. Stir to combine and reduce the heat to medium/low.
  5. Fry up your eggs. I think sunny side up or over easy work perfectly in this application, but dealers choice. You will want the yokes to be a little runny to sauce up the breakfast hash.
  6. To serve, divide the breakfast hash between the bowls and cover with cheese. Top with an eggs or two and some scallions to make it look pretty. Enjoy!
