Breakfast Tortilla Wrap: How to Make this Simple and Filling Breakfast

I know some of you out there are not breakfast people, which I do not understand. Breakfast is my favorite meal of the day and when I am feeling a mighty bit peckish, I make myself this breakfast tortilla wrap. Not only is it simple and quick to make, it will keep you feeling full well into the lunch hours.

My breakfast tortilla wrap is perfect for those busy days when you may or may not see a lunch hour turn up in your favor. Not only is it filling, but it is also super nutritious combining protein with an egg and some turkey bacon, a decent amount of vegetables, and healthy fats with some avocado. It really does not get better than this simple breakfast, so give it a try before your next busy day or the next time you have a severe case of the Mondays!

This is a recipe for one, but it is easily doubled or tripled if needed.

Breakfast Tortilla Wrap Ingredients:

1 large flour tortilla

2 strips of turkey bacon

1 egg

A slice of cheddar cheese

2 tomato slices

Some iceberg lettuce leaves

A few avocado slices

A couple red onion slices

Olive oil and salt and pepper to taste

Instructions:

  1. In a frying pan on medium heat, cook the bacon according to package instructions.
  2. In the same frying pan, heat the oil and cook the egg, seasoning with salt and pepper. I like to cook the egg over medium to avoid a mess, but you do you. When the egg is cooked to your liking, top it with cheddar cheese and remove it from the heat.
  3. Microwave your tortilla for 10 seconds. Make one cut half way across the tortilla and imagine the tortilla has 4 sections. Put the egg in one quadrant, the lettuce in one, tomato and onion, and avocado and bacon in the final quadrant.
  4. Fold the tortilla over itself, starting from the cut edge to make a triangular like sandwich and enjoy.
