Don’t get me wrong, I am huge fan of seasoning mixes. They make life so easy. But, I have found myself in a place where Cajun seasoning is not readily available at every grocery store. I am not smelling those spices when I walk down the streets of Dubai. So, alas, I must make my own. Which is actually fine with me because I have the ingredients on hand and I can control the spice and salt levels. While I am not the biggest salt fan, I do love spice, so feel free to tone down the cayenne pepper in your version. I also omit the garlic and onion powder in this recipe, but you could certainly had about 1 tablespoon each in if you wish.
Cajun seasoning is a blend of Spanish, French, and African seasonings that you probably have in your spice rack right now. It is the perfect blend of spicy cayenne, mellow, thyme, and tangy paprika that will spice up your gumbo or act as a great blackening mix on fish or chicken. This would also work well in meatballs or sprinkled over popcorn. It is so versatile and definitely worth some space in your pantry!

1/2 tablespoon thyme
1 tablespoon cayenne
1 tablespoon of each salt and pepper
Instructions:
- Mix it up! This Cajun Seasoning can be stored in an airtight container or a ziplock bag in your pantry for a while. Be sure to use it in your gumbo.
