I left Vietnam so inspired by the culture, the people, and of course, the food. Not only is Vietnamese cuisine delicious, but it’s simple and inspired by the fresh produce and meats that they have locally. One great example of this is Chicken Pho or Pho Ga. Inspired by my trip to Vietnam, this is my chicken pho recipe.
If you are unfamiliar, Pho is basically a noodle soup that can be made with beef, chicken, or even tofu. It’s simple but that’s the beauty of it. And a chicken pho recipe like this is perfect for nearly every occasion. Sick in bed – chicken pho! Rainy day – chicken pho! Lazy breakfast, you guessed it – chicken pho!
Make this after you make my super citrus roasted chicken, reserving some of the chicken breast for the soup and of course making the stock. Once you have those 2 ingredients, this comes together very quickly so it’s perfect! Roast a chicken Sunday, make the stock, and you will have a quick, delicious, and comforting weeknight dinner for Monday.
Serves 4
Ingredients:
8 cups chicken stock
12 ounces, or about 2 chicken breasts, cooked and sliced thin
8 ounces of rice noodles
6 ounces bean sprouts
1 thumb of ginger, grated or minced
1 clove of garlic, grated or minced
Juice of 1/2 lime. The rest of the lime can be cut into wedges for garnish
1 teaspoon of fish sauce
1 jalapeno, sliced
Cilantro, Thai basil, sriracha, and hoisin sauce for serving
Instructions:
- In a large stock pot, combine chicken stock, ginger, garlic, fish sauce, and lime juice. Cover and bring to a boil.
- Add the rice noodles to the pot, turn the heat off, and cover. The noodles should be cooked in 3-4 minutes.
- In 4 large soup bowls, divide chicken and bean sprouts. Divide the noodles and broth between the bowls to cover the chicken and bean sprouts.
- Serve with extra lime wedges, jalapeno, cilantro, basil, sriracha, and hoisin sauce.
