I love Mexican food. I could eat it for breakfast, lunch, and dinner. And this chilaquiles recipe is perfect for all of those meals, but specifically great for a Sunday brunch.
Chilaquiles is a Mexican dish that is fried corn tortillas cooked in salsa or sometimes a mole and topped with your favorites likes cheese, cilantro, fried eggs, and jalapeno peppers. I make this recipe when I have tortilla chips go stale on me in the cupboard, and you should too, because it makes the perfect base for this meal.
Unfortunately, I cannot find very food Mexican ingredients around here, so I am improvising some parts of this but it still comes out quite delicious. Pair this with my bloody Mary or even a Paloma or a margarita and you got yourself one stellar brunch!
Serves 2
Ingredients:
3 tomatoes, chopped
2 green chilis, sliced thinly
2 tablespoons of olive oil
1/2 bag of stale tortilla chips
4 eggs
1/2 teaspoon cumin
1 teaspoon chili powder
2 tablespoons tomato paste
2 cloves of garlic, minced
1 Thai red chili, minced
1/2 cup of water
Toppings of your choice like mozzarella or cheddar cheese, thinly sliced radishes, avocado, cilantro, and pickled jalapenos.
Instructions:
- Begin by heating a nonstick pan over medium-low heat and adding 1 tablespoon of olive oil. Add the chopped tomatoes and their juices to the pan and season with plenty of salt and pepper. Allow those to saute for about 5 minutes.
- Add the green chilis and cook for another 2 minutes while they begin to soften.
- Add the garlic and red chili to the mix and cook for 30 seconds before adding the tomato paste, cumin, and chili powder. Stir to combine.
- Add the water to thin out the sauce and give it a quick stir to combine all of the ingredients. Add in the tortilla chips and stir to make sure the chips are covered with the sauce. Reduce the heat to low.
- In the meantime, begin frying eggs in a separate nonstick pan in the remaining oil. Season the eggs with salt and pepper.
- Assemble the chilaquiles by adding a layer of the chips to the bottom of a shallow bowl. Top with cheese and then 2 fried eggs. Make it look pretty with radishes, cilantro, jalapenos, or whatever toppings you like.
