Cod with Ritz Topping: How to Make this Simple yet Delicious Recipe

If you are one of those people that is intimidated to cook seafood at home, my cod with ritz topping is so simple yet delicious that it will change the way you think about cooking fish. Look, I have had bad experiences cooking seafood amongst many other things. Seafood can be particularly tricky because it can stink and pretty much ruin your whole night. But, I promise you that my cod with ritz topping is good and doesn’t stink up the house.

I mean, how could you go wrong with butter, garlic, and a salty ritz cracker? You can’t. It’s just impossible. Dare I say that this is a foolproof recipe? Well, maybe I won’t go that far, but if you get a fresh piece of cod fish, it’s pretty damn near unfeasible that this will turn into a disaster. In fact, it just might get you a ton of compliments.

So next time you are craving a delicious seafood dinner, try this recipe and impress your guests!

Serves 4

Suggested Wine Pairing:

Try my cod with ritz topping with a pinot grigio or chardonnay for the perfect pairing.

Ingredients:

1 pound of fresh cod or haddock

4 tablespoons of butter, melted, plus more for greasing the pan

1 sleeve or about 15 ritz crackers

4 cloves of garlic, minced

2 tablespoons of parsley, finely chopped

Juice of 1/2 lemon or about 2 tablespoons

Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400 degrees. While the oven preheats, oil or butter your baking sheet. Dry the cod by gently pressing it with a paper towel.
  2. Melt the butter in the microwave for about 30 seconds. Meanwhile, crush the ritz crackers into breadcrumb size.
  3. In small mixing bowl, combine the butter, garlic, lemon juice, parsely, and crackers.
  4. Place the cod onto the greased baking sheet and season with salt and pepper. Then, gently spread the cracker mixture over the fish.
  5. Bake at 400 degrees for 8-10 minutes depending on the thickness of the fish. Broil on high for the last 2 minutes to crisp up that ritz topping and serve immediately.
