These crispy, oven baked tacos are a great option when you are looking to mix it up from your usual taco night. Unfortunately, corn tortillas do not exist out here in the UAE, so I gotta get creative with those old school taco shells!
The hard taco shells come out perfectly in the oven and they don’t instantly fall apart when you bite into them after they have been cooked. However, they still have a good crunch and the tender pulled chicken with the spices and melted cheese is just perfection. Try this for your next taco Tuesday!
Serves 4
Ingredients:
2 chicken breasts, poached and pulled or 1 lb. of ground chicken, turkey, or ground beef
8 taco shells
1 bell pepper, diced
1/2 onion, diced
1 tomato, diced
2 tablespoons cream cheese
1 cup of cheddar cheese, shredded
1 jalapeno, diced
2 cloves of garlic, minced
1 tablespoon of chili powder
1 tablespoon of cumin
Instructions:
- If you are using chicken breast, cover the chicken with water and add some salt and pepper to the water. Bring the chicken to a simmer and allow to cook for about 20 minutes. Remove from the heat and allow to cool slight before shredding with 2 forks.
- Sauté bell pepper, jalapenos, and onion for about 5 minutes or until the onions are translucent. Add the tomatoes and cook for another 2-3 minutes. Add the garlic, chili powder, and cumin. Stir and cook for another minute.
- Preheat oven to 400F.
- Combine the chicken with the pepper mixture in a mixing bowl with cream cheese and cheddar cheese.
- Line up the 8 taco shells in a baking dish and fill each shell with the chicken mixture. Cook for 20 minutes and enjoy with extra guacamole, pico de gallo, and a frozen watermelon margarita!
