Everything Tuna with Gingered Carrots and Wasabi Mash

Everything bagel seasoning is literally my everything. It pairs so well with all things from bagels of course, but also avocados, popcorn, and tuna. I’m not talking about a can of tuna fish that smells like cat food, I am talking about a fresh ahi tuna steak that you can just lightly sear and it forms the best and most flavorful crust with the everything bagel seasoning.

But, I can’t leave you hanging with just a slab of tuna! Pair this with sautéed ginger carrots and a silky mashed potato that’s spiced with a hint of wasabi, and you have yourself a perfect meal. The peeling of the potatoes and carrots can take some time, but aside from that, this meal comes together quickly so it would be perfect for a weeknight, but really any day of the week!

Wine Pairing:

You can’t go wrong with a Rose with the spices form the everything tuna and the wasabi mash, but you could also try it with a Saketini to mix it up a bit!

Everything Tuna

Ingredients:

For the Tuna:

1 – 1.5 pounds of fresh tuna, about 4 thinly cut medium steaks or 2 large ones

1/2 cup of everything bagel seasoning (Trader Joe’s has great one that is somehow only $1.99)

For the Carrots:

1 pound of carrots, peeled and sliced on the bias

Gingered Carrots

1 cloves of garlic, minced

1 thumb of ginger, peeled and minced

1 tablespoon of sesame oil

1 tablespoon of soy sauce

For the Wasabi Mashed Potatoes:

1 pound of Yukon gold (or similar) potatoes, peeled and chopped

1 cup of room temperature milk

2 tablespoons butter

2 tablespoons wasabi paste

1 teaspoon salt

1/2 teaspoon pepper

Instructions:

  1. Start boiling the potatoes by adding the chopped and peeled potatoes to salted water so they are just covered. Bring to a boil and then reduce to a simmer for about 20 minutes.
  2. Meanwhile, remove the tuna and one cup of milk from the fridge and allow it to come to room temperature.
  3. Begin to sauté the carrots in sesame oil over medium heat. Carrots take some time to soften, so begin this once the potatoes are simmering. After about 15 minutes, add the garlic, ginger, and soy sauce and reduce heat to low.
  4. Dry the tuna with a paper towel on each side and then crust each steak with the everything seasoning by pouring the seasoning on a cutting board and gently pressing each steak into the seasoning. Do this on both sides and preheat a stainless steel skillet over medium high heat. Add about 2 tablespoons of oil and add the tuna once the pan and oil are preheated. Cook for about 3 minutes each side.
  5. To finish the potatoes, drain them from the cooking water and put them back into the pan they simmered in. Add salt, pepper, butter, wasabi paste, and milk. Mash together until the desired consistency is acheived. For stiffer potatoes, use less milk and for more creamy, use more.
  6. To serve, I like to cut the tune into strips, but you could leave them whole. Divide amongst plates with a heaping helping of potatoes and carrots.
