Serves 4-6

Suggested Wine Pairing:

A French chablis with crisp apple and citrus notes will pair perfectly with these feta and zucchini chicken meatballs.

Tools:

I am using an air fryer for this recipe but you could just as easily use a regular oven and bake these feta and zucchini chicken meatballs or pan fry them.

Ingredients:

For the meatballs:

1 pound of ground chicken

2 small zucchinis, grated and drained of any excess moisture

1/2 cup breadcrumbs

1/2 cup feta

2 cloves of garlic, minced

1/2 red onion finely diced

1 jalapeno or serrano chili, finely diced

2 tablespoons of dill, finely chopped

1 tablespoon of lemon zest

For the bowl:

1 more zucchini, sliced

2 cups of spinach

Juice of 1/2 lemon

To serve:

1 & 1/2 cups couscous

1/2 cup of black olives, sliced

A healthy serving of tzatziki

Instructions:

  1. Preheat your air fryer to 400 F.
  2. Meanwhile, combine chicken with zucchini, breadcrumbs, feta, red onion, chili, dill, garlic, and salt and pepper in a mixing bowl. Stir to combine.
  3. Using an ice cream scoop, tablespoon, or your preferred method, make evenly sized meatballs and place them in the air fryer basket or tray. Cook for 25 minutes, turning halfway through.
  4. While your feta and zucchini chicken meatballs cook, make your couscous according to the instructions on the box.
  5. Saute the additional zucchini and spinach in some olive oil for about 5 minutes. Finish it with lemon and some salt and pepper to taste.
  6. Once the feta and zucchini chicken meatballs are done, make your bowls by adding about 1/2 cup of couscous and topping that with 3-4 meatballs (depending on size). Add the additional zucchini and spinach. Add some black olives and tzatziki and you got yourself a nutritious and delicious meal.
