Feta eggs are the latest egg craze hitting the interwebs and let me tell you, this is worth every penny to buy those pricey eggs. And the only way to make these feta eggs is on top of an avocado toast. Just trust me, it is so good, you might just bankrupt yourself buying eggs and making this for breakfast morning after morning.
Similar to the pesto eggs, all you have to do is heat up some feta in a frying pan and then crack an egg and let the magic happen. It is so easy to make but so delicious, I can see why this recipe has gone viral. The salty and tangy feta is a perfect pairing to the creamy and delicate texture of the egg. Add in some toast and avocado and you got yourself the perfect breakfast that might become a staple! So, if you have not tried the viral feta egg recipe, give it a go with my recipe below. This recipe serves 1, but it is easy doubled or even quadrupled for a group.
Ingredients:
1 egg
2 tablespoons of crumbled feta
1 piece of whole wheat bread
1/2 avocado
Salt, pepper, and chili flakes to taste
Instructions:
- In frying pan over medium high heat, add the feta to the center of the pan and allow that to slightly melt before adding the egg. Season with salt and pepper and add 1 tablespoon of water and cover.
- Meanwhile, toast your bread and then spread half of the avocado on the bread. By now, your egg should be finished cooking, so add that delicious feta egg on top of your avocado toast and dust with some chili flakes if desired.
