Gluten Free Chicken Lo Mien Recipe

This gluten free chicken lo mien recipe is perfect for when you are sick of your usual chicken and broccoli pasta but still want that comfort food feeling. This recipe is a twist that will activate your taste buds without busting your budget. And the added bonus is that this comes together quickly and is better than takeout. It is the perfect lazy, pasta, weeknight dinner. Try this gluten free chicken lo mien tonight!

Serves 4-6

Ingredients:

2 chicken breasts, cubed

1 pound of gluten free spaghetti

8 ounces of broccoli florets

8 ounces of sliced water chestnuts, drained

2 cloves of garlic, minced

1 green chili, minced

3 scallions, sliced

For the sauce:

1 tablespoon hoisin sauce

2 tablespoons of oyster sauce

1 cup of chicken stock

1 teaspoon of sesame oil

3 tablespoons of gluten free soy sauce or tamari

2 tablespoons of cornstarch

1 tablespoon of ginger, minced

Instructions:

  1. Start by par-boiling the broccoli. You can save yourself a pan by adding about 1/2 cup of water to the bottom of a wok and bringing that to a boil. Add the broccoli and cook for 3-4 minutes or until the florets are bright green. Drain and return wok to medium high heat.
  2. Next, begin boiling water for pasta to make sure this comes together fast and easy. When it is boiling, cook to the instructions on the package and drain. Rinse the pasta with cold water.
  3. In your wok, add some cooking oil and sauté the chicken until cooked through, about 5 minutes. Once the chicken is cooked, add the garlic and chili and cook for another minute before adding the broccoli and water chestnuts.
  4. Combine the ingredients for the sauce in a bowl and stir to combine, making sure the cornstarch dissolves.
  5. Add the spaghetti to the wok and stir in the sauce. Make sure all of the pasta, chicken, and vegetables are coated with the sauce and remove from heat.
  6. Top with scallions and enjoy your easy home cooked meal!
