How to Make Goat Cheese and Mushroom Pasta: Elegant Comfort Food

Very few things in life are as comforting as a cheesy and delicious bowl of pasta and sometimes, nothing else will do. This is exactly how I feel about my goat cheese and mushroom pasta. It’s that perfect comfort food that fits the bill, but has that extra elegance that pairs so well with wine and almost spells date night.

Not only is my goat cheese and mushroom pasta a great comfort food, but because it has a hint of elegance it is versatile for those occasions when you want comfort food and a glass of wine. To me this is the perfect meal for a Friday night to end the week or the best thing you could eat on a Sunday night before the week begins. Dealers choice but anyway you enjoy it, you are sure to love my goat cheese and mushroom pasta.

Serves 4

Suggested Wine Pairing:

A pinot noir will really pair well with the mushrooms and complement the flavors of an aged goat cheese.

Goat Cheese and Mushroom Pasta Ingredients:

18 ounces of pasta, I think shells work best for this recipe

8 ounces of mushrooms, sliced

4 ounces of baby spinach

1 shallot, finely diced

2 cloves of garlic, minced

1/2 teaspoon of dried thyme

1 tablespoon of butter

1/4 cup of milk

6 ounces of goat cheese

Salt and pepper to taste

Instructions:

  1. In a medium saucepan, heat up the butter and add the mushrooms and saute for about 5 minutes over medium heat, stirring occasionally. After 5 minutes add the shallot and garlic and season with salt, pepper, and thyme.
  2. Meanwhile, cook the pasta according to package instructions. Drain and reserve 1/2 cup of the cooking liquid.
  3. Back to the vegetables, add the spinach and season with a bit more salt and pepper. After 2 minutes or so, the spinach should be just wilted. Add the goat cheese and milk. Season to taste as needed. Stir to combine.
  4. Once the goat cheese has melted, combine the vegetables with the pasta, adding the reserved pasta water as needed until the sauce coats all of the pasta. Divide into bowls and serve.
