Green Pico de Gallo: How to Make a Different Variation

If onions aren’t your thing, maybe skip to the next recipe. This Pico de Gallo is onion heavy, super easy, and delicious. Unfortunately, I ran out of tomatoes but was just lazy enough not to run out and get more. Instead, I went full steam ahead to find out what happens when you make Pico de Gallo with more onion than tomato. The result had a bit more bite and was a bit green, but in the best way possible. 

Green Pico de Gallo

Makes about 3/4 cup

Tools:

Typically, Pico de Gallo can be made just by chopping everything up and if that’s your thing, go for it. Because this recipe uses a lot of onion, I prefer more of a smooth texture rather than chunky, so I used a blender for the perfect consistency.


Ingredients: 

roma tomato

1 clove garlic

1/2 of a red onion, roughly chopped

1 Roma tomato, roughly chopped and seeded

1/2 cup of jarred or 1 fresh jalapeno, roughly chopped

Juice from 1/2 fresh lime

1/4 cup of cilantro

1/2 tsp salt and pepper

Instructions:

  1. Add all ingredients to a blender and blend to your hearts content. Serve with chips or top your breakfast tachos or fajitas.
