You can’t get everything here in the UAE. Mexican ingredients can be particularly challenging to come by. I have not found corn tortillas, nor the masa to make my own. And queso fresco is definitely not available. But no worries, feta is here and cheap, so we got a substitute. And while it is not authentico, it’s damn good Greek inspired street corn. Try this on your next taco night!
Grexican Street Corn
Serves 4

Ingredients:
2 ears of corn
Juice from 1/2 lime
1 tablespoon of butter
2 cloves of garlic, minced
1 Thai red chili or jalapeno, minced
2 tablespoons sour cream
1/4 cup feta, crumbled
Handful of cilantro, chopped
Instructions:
- Grill or place ears of corn in a dry cast iron skillet to slightly char. Use high heat and turn every 30 seconds.
- Remove the corn from the heat and allow to cool. Once it is cool enough to handle, remove the kernels.
- Heat the butter over medium heat and add charred corn kernels, salt, and pepper. Cook, stirring occasionally for 5 minutes.
- Stir in garlic and chili pepper and allow to cook for 30 seconds before adding lime juice.
- Once the lime juice is absorbed, remove mixture from heat and put it into a mixing bowl.
- Add sour cream and feta and stir to combine.
