Get that grill ready to be back in action with my delicious and healthy recipe for grilled shrimp and romaine salad with a delicious green goddess dressing. The shrimp are seasoned to perfection with just enough spice and citrus to make them plump and juicy while the romaine is simply seasoned with oil, salt, and pepper and tossed on the grill for just a few minutes to a smoky perfection. Add some of your favorite green veggies like fresh peas, crunchy bell peppers, and cucumbers to top off the romaine. And finally, a healthy dose of feta and my sumptuous green goddess dressing ties it all together for the perfect, healthy meal off the grill.
And if you have never had grilled romaine lettuce before, you are in for a treat. Once the lettuce hits the grill, it gets a little char, but really absorbs some of that smoky goodness and tastes amazing. It is the perfect accompaniment to grilled shrimp and the green goddess dressing really tops it off for a perfect meal.

Suggested Wine Pairing:
The earthy and herbal notes of a sauvignon blanc will pair perfectly with the grilled shrimp and green goddess dressing.
Tools:
If you are worried about your shrimp falling through the grill cracks, you will want to make sure you skewer your shrimp with metal or soaked wooden skewers.
The easiest way to make this dressing is in a food processor, but you could also chop the ingredients by hand.
Ingredients:
4 small hearts of romaine, cut in half length-wise
1 cucumber, sliced
1 bell pepper, diced
1/2 cup of peas
1/2 cup of feta cheese
For the Shrimp:
1lb shrimp, peeled and deveined
1 teaspoon of salt
1/2 teaspoon of pepper
1/2 teaspoon of cayenne pepper
1 teaspoon of paprika
Juice of 1/2 lemon
2 tablespoons of olive oil
For the green goddess dressing:
2 tablespoons of each cilantro, parsely, and scallions
1 avocado
2 cloves of garlic
Juice of 1/2 lime
2 tablespoons of plain yogurt
2 tablespoons of olive oil
1 teaspoon of salt
1/2 teaspoon of pepper
Instructions:
- Preheat your grill to medium. In the meantime, salt and pepper the romaine lettuce and drizzle olive oil over the top.
- In a mixing bowl, add all of the seasonings to the shrimp and stir. Skewer the shrimp onto soaked wooden skewers or metal skewers.
- Place the romaine on the grill, cut side down. Cook for 4 minutes until flipping to the others side and cooking for another 4 minutes.
- In the meantime, combine all of your ingredients for the green goddess dressing in a food processer and pulse until smooth.
- Remove the romaine from the grill and top with cucumbers, peas, bell pepper, and feta.
- Grill the shrimp for about 3 minutes each side or until just cooked through.
- Add the shrimp over the romaine. Drizzle the green goddess dressing over the top and enjoy with some garlic bread if desired.
