It’s often said that breakfast is the most important meal of the day and I believe that it should also be delicious. I also don’t think good breakfasts should be reserved for the weekend only. Everyday can be a celebration of the mediocrity of life when you are well fed in the AM! Enter my halloumi and avocado breakfast sandwich.
Part of being well fed is, of course, nutrition. Blah, blah, blah; am I right? But, this sandwich could be a lot worse for you. Sure there are carbs, but we need carbs to survive, right? And you got some veggies, a little snippet of fruit in the mango hot sauce, an egg for protein, and of course, our piece de resistance, halloumi cheese. And while it does pack a salt punch, it is high in protein, calcium, and in the world of cheeses, technically has a lower fat content than cheddar.
So go ahead, indulge in your breakfast conquests and enjoy the most important meal of the day with the ultimate halloumi and avocado breakfast sandwich!
Makes 2 Sandwiches
Ingredients:
4 slices of good sandwich making bread. I think sourdough works particularly well with this recipe.
2 eggs
4 ounces of halloumi, cut into 4-6 slices
1 avocado
4 lettuce leaves, thickly cut
1/2 tomato, sliced into 4 rings
4-6 half moon slices of red onion
4 tablespoons of mango hot sauce or spicy mayo if you prefer. I make one with my seared tuna recipe
Instructions:
- Fry your halloumi. I recommend using a nonstick pan and cooking spray. When you fry it, a lot of moisture will be released from the cheese, so you do not need too much fat. Heat the pan on medium high heat, spritz some cooking spray and fry the halloumi, about 4 minutes on each side, or until it gets a little caramelized. Remove the halloumi from heat and dump out any moisture.
- In the meantime, begin assembling the sandwiches by toasting your bread and then spreading 1/2 of an avocado on 2 pieces of bread. On the opposite half of the bread, cover it with the mango hot sauce. Top the tomatoes over the avocado and the lettuce over the mango sauce. Sprinkle those onions in there and then top with the fried halloumi.
- Fry your eggs to your liking, but it’s best if there are still a little runny, so over easy works perfectly. Top the halloumi with the eggs and enjoy!
