My herb marinated chicken is essentially the perfect thing to make when you don’t know what to make. You likely have everything you need to make this in your fridge and pantry right now and it literally pairs with almost everything. This recipe is the lazy weeknight chicken breast you have been dreaming of!

Serves 4

Suggested Wine Pairing:

I think this pairs very nicely with a white wine. I like it with a pinot grigio or sauvignon blanc.

Ingredients:

4 chicken breasts, pounded thin and even

2 cloves of garlic, minced

1 teaspoon of dried oregano

1 sprig of thyme

2 tablespoons of olive oil

2 tablespoons of red wine vinegar

Juice of 1/2 lemon

Salt and pepper to taste

Optional: parsley or parmesan cheese to serve

Instructions:

  1. Trim and pound the chicken breasts to your desired thinness. The thinner the breast is the quicker it will cook.
  2. Mix the rest of the ingredients together and place the chicken in the marinade, ensuring each breast is covered with the mixture. Marinate for 30 minutes to 2 hours.
  3. Heat a skillet over medium high heat and add a little oil. Add the marinade and the chicken and cook for 4 minutes each side or until the chicken is cooked through. Serve this with your favorite salad, pasta, or potatoes with parmesan cheese and parsley to serve!
