How to Make Homemade Garlic Hot Sauce

We go through hot sauce quickly in my household, but luckily enough, I love to make my own version of homemade garlic hot sauce. But beware, it is deadly in a delicious way.

Back in New Orleans, we had a cayenne pepper bush that produced so many peppers. It produced them often and for over a year straight, because we had a mild winter and it never stopped blooming. I didn’t know what to do with all of these peppers because they are super spicy and can’t just be consumed on their own. I tried drying them adding them to stir fries, tacos, and gumbos but I still had so many. So, I ended up making dozens of jars of this homemade garlic hot sauce and giving them away to whoever would take it.

Now, in the UAE, we do not have the cayenne pepper plant that keeps on giving, but we do have a local grocery store that sells Thai Red Chilis in large quantities. You probably noticed that I use theses chilis in many, many recipes. But you can also make a pretty good hot sauce with them. But seriously, be careful, you only need a few drops!

This recipe makes about 3/4 of a cup. Be sure to store this in an airtight glass jar and it should last for a few months.

Tools:

Yup, you guessed it. You will need a blender for a food processor.

Ingredients:

20 red chilis, stem removed and cut in half. You will want to be careful with this process and even consider wearing gloves. DO NOT touch your eyes, nose, mouth, or any other orifices before washing your hands thoroughly. You will regret it.

1/2 cup of white vinegar or just enough to cover the chilis

3 garlic cloves, smashed

2 teaspoons of salt

Instructions:

  1. Combine chilis, vinegar, garlic, and salt in a sauce pan and bring to a simmer. Simmer for about 20 minutes. It will be fragrant.
  2. After 20 minutes, remove the sauce from the heat and allow it to cool for at least 10 minutes.
  3. Blend the sauce completely in a food processor or blender until smooth. Store it in a glass jar in the refrigerator. It should keep for a few months.
