Huevos Rancheros: How to Make this Delicious Brunch Recipe

I cannot stress how much I enjoyed breakfast in Mexico. They really do it right and the Huevos Rancheros were no exception. You got your spicy ranchero sauce with tortillas, refried beans, and a perfectly fried egg. It’s a perfect breakfast, but I wouldn’t hesitate to enjoy it for lunch or dinner either. I really could eat it all day long.

Not only is it delicious, but huevos rancheros is also simple to make and sure to be a crowd pleaser. Its appeal lies not only in its delicious taste but also in its versatility—you can customize it with your favorite toppings to suit your taste preferences. Whether enjoyed for breakfast, brunch, or even dinner, huevos rancheros never fails to satisfy with its comforting and satisfying combination of flavors. Make this the next time you host any meal and your guests will not be disappointed!

Serves 4

Ingredients:

8 corn tortillas

4 eggs

2 cups of refried beans, homemade or canned

2 cups of ranchero sauce, homemade or store bought

1 cup of shredded mozzarella or cheddar cheese

For the pretty: jalapeno, avocado, and cilantro to top.

Instructions:

  1. Begin by heating up the ranchero sauce over medium heat until it begins to bubble. Remove from heat but keep warm.
  2. Meanwhile, take 1 tortilla and spread refried beans over it and 2 tablespoons of cheese. Top it with another tortilla. Cover it with the hot ranchero sauce. Continue this process with all 8 tortillas.
  3. Fry the 4 eggs till they are cooked to your desire. Over easy or sunny side up works best for this application.
  4. To serve, take your little tortilla and bean sandwich and top it with an egg. Garnish with any extra cheese, cilantro, jalapeno, and/or avocado to your liking.
