Japanese Train Station Egg Sandwich, Or the Only Thing my Mom Can Cook

Everyone is now familiar with the viral Japanese 7/11 egg salad sandwich, but I am not sure everyone is familiar with the Japanese train station egg sandwich. And for good reason, because it’s not a thing. However, I did get a chance to have one of these delicacies while waiting for my shinkansen from Osaka to Kyoto and in my humble opinion, this was way better than the 7/11 version.

For starters, this egg sandwich was not egg salad but instead fluffy scrambled eggs piled high onto crustless white bread. The only demerit was the heavy slab of mayonnaise, which if you know me, I am not a fan.

This version of the japanese egg sandwich actually was super reminiscent of one of the only things my mom can cook aside from rice. My mom used to make the best egg sandwiches using soft white bread, not toasted, but buttered to perfection and then slapped on a fried egg. So, not exactly the same, but very similar.

For this recipe, I thought I would combine my mom’s version and the Japanese train station egg sandwich to make the perfect version. It’s a little controversial, because in order to get those scrambled eggs nice and fluffy, you need to add water, not milk and whisk and wait before cooking for the fluffiest most delicious eggs imaginable. Serves 2

Ingredients:

3 tablespoons of butter

3 eggs

1 tablespoon of water

4 slices of milk bread or white bread like Wonder bread

Salt to taste

Instructions:

  1. Crack eggs into a large bowl. Add a dash of salt and water. Whisk for about 3 minutes, until the volume has doubled.
  2. Allow the egg mixture to rest for at least 10 minutes at room temperature.
  3. Meanwhile, cut the crusts off the bread.
  4. Melt the butter in a nonstick pan over medium-low heat.
  5. Once the butter melts, gently stir in the eggs with a silicone spatula. This will help get those eggs fluffy.
  6. Next, remove the eggs from the heat when they are 75% of the way cooked to keep them extra soft.
  7. Top a bread slice with half the mixture of buttery, fluffy eggs. Top with another slice of bread and cut into triangles. Repeat with the other 2 slices of bread and enjoy immediately, before the bread dips out.
