My name is Robyn and I am an lentil-holic. It’s true. I love lentils so much that I want to make everything with them. From bolognese to soup and this delicious lentil salad, you can tell I have a serious problem. And I am not going to do anything about it, especially not rehab; no, no, no.
In fact, I am doubling down. I will eat more lentils and I will get others hooked, especially with this simple, delicious, and nutritious lentil salad with feta cheese and lemony dressing. Combine your favorite vegetables like tomatoes, cucumbers, peppers, and spicy red onions on a bed of arugula and top it with some simple cooked lentils, feta, and lemon salad dressing and you got your perfect vegetarian lunch or lite dinner. You might just get addicted too.
So, come on now. You know me, I’m your friend. You’re main girl, thick and thin. I’m your pusherman (for lentils).
Serves 2, but can be easily doubled.
Lentil Salad Ingredients:
1 cup of your favorite lentils, soaked for 2 -4 hours. I used red lentils.
1 cup of vegetable broth or water
4 cups of arugula
1 tomato, sliced
1 cucumber, sliced
2 radishes, sliced
1 yellow bell pepper, sliced
2 stalks of celery, sliced
2 tablespoons of red onion, diced
1/2 cup of feta, crumbled
For the Lemon dressing:
Juice of 1 lemon
1/4 cup of good olive oil
1/2 teaspoon of salt
1/2 teaspoon of oregano
Dash of pepper to taste
Instructions:
- Start off by draining your soaked lentils and adding them to a small saucepan with either water or vegetable stock. Add some salt and get those boiling. When they boil, reduce the heat to low and cook for 10-15 minutes to your desired consistency. The goal is for them to be soft but keep their shape, so they are not too mushy. Once they are cooked to your desired doneness, drain any liquid if necessary and rinse with cold water.
- Meanwhile, assembled your salad by topping a bed of arugula with all of the vegetables and feta cheese.
- Make the dressing by combining all dressing ingredients in a jar and shake it up like a polaroid picture.
- Finally, top the salad with lentils and dressing and enjoy your fix.
