I love pasta and these pasta rags with burrata and tomatoes are almost too delicious and it is actually addictive. Yes, it’s that good. Not only that, but these pasta rags are the answer to that box of lasagna noodles that you have had staring at you from the top shelf of your cabinet for god knows how long.
Pasta rags are delicious but also super easy to make. Tear the noodles in half and cook them for about 13 minutes. While the pasta cooks, make the sauce with plenty of olive oil, grape tomatoes, loads of garlic and maybe some spinach if you want to feign healthfulness. And then toss it together with some torn burrata and voila, you have the best pasta dish maybe ever.
So, when you need a pasta fix but don’t have the energy or time to make a full on lasagna, just tear those noodles in half and add this simple yet sumptuous sauce and you might just start buying lasagna noodles every week!
Serves 6
Suggested Wine Pairing:
A pinot noir for my red lovers and pinot grigio, if you’re a basic b*tch prefer a white wine.
Ingredients:
1 box of flat lasagna noodles. I used the Barilla Collezione and it turned out perfect, but the type with the curly sides would work too.
12 ounces grape tomatoes
8 ounces baby spinach
6 cloves of garlic, minced
1/4 cup good olive oil
6 ounces of burrata
3/4 cup of reserved pasta water
1 teaspoon of each basil and oregano
Salt and Pepper to taste
Optional additional parmesan if the burrata isn’t cheesy enough for you
Instructions:
- Get your water started to boil for the pasta and split your lasagna sheets down the center, lengthwise.
- Heat the olive oil in a large saucepan over medium heat. Add the grape tomatoes and plenty of salt and pepper.
- Once your pasta water is boiling, add a tablespoon of salt and your lasagna noodles. Cook to the package instructions, draining when finished. Reserve 3/4 cup of the pasta water.
- Meanwhile, back to our rustic sauce. Once the tomatoes begin to burst, about 10 minutes, add the garlic and allow to cook for a minute. Then add the spinach, organo, and basil. Stir to combine, smashing the tomatoes a little with the back of your spoon.
- Combine the sauce with the cooked noodles and stir. Tear the burrata and add to the noodles along with the reserved pasta water. Stir to combine and serve immediately.
