Pasta salad is a very strange invention that is not what I would typically consider salad and is a poor excuse for pasta. I mean, cold pasta in salad dressing? It’s a bit odd. And even worse is when that dressing is mayo based. It’s a no from me.
But, I must admit, it’s a pretty good side dish for a picnic or BBQ, especially on a hot day when you still need glorious carbs. And it’s so easy to make, it’s hard to argue with this classic. Who doesn’t remember the Suddenly Salad boxed version? Why we needed this packaged, I am not sure. All you really have to do is boil water, but OK! It was still good, so here is my version that is sure to please.
Ingredients:
16 ounces of cooked penne or any noodle you like. Except for spaghetti. That would be a weird choice for pasta salad.
1 cup of grape tomatoes, halved
1/4 cup of basil, roughly chopped
1 small bell pepper, chopped
1/2 red onion, diced
8 ounces of bocconcini or mozzarella balls. I used a smoked version and it was sooooo good!
1/2 cup of Italian dressing
Instructions:
- This is one of the easiest recipes of all time. You see the list of ingredients up there? Cool, well combine them together and give it a stir and viola, you got yourself pasta salad. Quick, easy, delicious, and perfect for a picnic party!
