Let’s face it. Life can be super annoying sometimes. I’m talking when you wake up and you feel like smacking a b*tch. Or when your to-do list is filled with tasks that seem unbearable and you just have to get through it. When there is no end in sight to the never ending work day and you probably won’t even get time to have lunch, I got you with this quinoa breakfast bowl. This might seem like a lot of food, but trust me, you will need it. Or you might need it to throw at someone.
Quinoa Breakfast Bowl
Serves 1 – 2 depending on your mood
Ingredients:
1 cup of cooked quinoa
1/2 cup of baby spinach
4 Strawberries, chopped
1/2 Avocado, chopped
1/4 cup feta, crumbled
Directions:
- This is my go to breakfast, so I always have cooked quinoa for my breakfast bowl in the fridge. I simply pop that in the microwave for 2 minutes with the baby spinach while I finish cooking the eggs.
- Arrange all ingredients over the quinoa and enjoy breakfast bowl your few moments of peace before the chaos of the day begins.
