Rainbow Kale Salad with Grilled Halloumi: You will CRAVE This Salad

This kale salad with grilled halloumi has become a staple in my household during busy weeknights, especially if I am working late or if we need to be someplace after dinner. It comes together quickly with the ingredients you likely have in your fridge and as an added bonus, it can use up a bunch of stuff that may or may not being going bad as you order take out.

I like to pair my kale salad and grilled halloumi with store bought, marinated chicken skewers, but you could just as easily grill a simple chicken breast or thigh with lemon and olive oil for a healthy and quick meal. Although, the star of this kale salad is the squeaky and delicious halloumi. If you are not familiar with halloumi, go to the closest Lebanese restaurant and order it now. You will not regret it.

Halloumi is a salty cheese that is usually a mixture of sheep and goat milk, but has a mild taste. The melting point of this cheese is also very high, so it pairs well with frying or grilling applications. This cheese is found easily here, and I have found it at Whole Foods state side. It’s a bit pricey at home, but it is so good, it’s definitely worth picking up!

Serves 4 as a side dish or light lunch.

Ingredients:

Halloumi

6 ounces kale

8 ounces halloumi cheese

1 yellow bell pepper, diced

1 medium tomato, diced

2 small carrots, diced

2 Persian or pickling cucumber, diced

1/2 small red onion diced

1/4 cup pomegranate seeds

Juice of 1/2 Lemon

3 tablespoons balsamic glaze or vinegar

Freshly ground black pepper

Instructions:

  1. Preheat an indoor or outdoor grill to medium.
  2. Place kale into a salad bowl and squeeze the lemon juice over said kale. Toss with your hands to combine and give that kale a much needed massage.
  3. Add remaining vegetables over the kale.
  4. Slice halloumi into 1/2 inch thick sections and add to the preheated grill, flipping after about 3 minutes on each side. Add to the top of the salad.
  5. Drizzle balsamic glaze or vinegar over the top of the salad and grind a bit of pepper over top.

You should feel the healthiness of this salad cleansing your dark soul as you eat it.
