Crispy Oven Roasted Potatoes with Feta, Dill, and Lemon

This Greek inspired roasted potatoes recipe is easy, delicious, and a perfect side dish for chicken, fish, or whatever you are cooking! The way I make these roasted potatoes crispy is essentially making a salad dressing for the roasted potatoes and tossing them in that prior to putting them in a preheated oven. You could also use an air fryer, but I make a generous portion of these, so the oven works best for me. I also add the feta and fresh herbs at the end of cooking so nothing burns or gets soggy, but you get that nice crispy roasted potato with the salty and creamy feta for the perfect bite. It really completes your weeknight meal.

Serves 4

Oven roasted potato dressing

Ingredients:

4 – 5 medium white potatoes, diced into routine sized pieces

1/4 cup olive oil

Juice of 1/2 lemon

2 cloves of garlic, minced

1 teaspoon of salt

1/2 teaspoon of pepper

1/2 teaspoon dried oregano

1/4 cup dill, chopped

1/2 cup feta cheese, crumbled

Instructions:

  1. Preheat oven to 400F. While you wait for the oven to preheat, wash, dry, and dice your potatoes.
  2. In a large mixing bowl, combine the oil, lemon juice, garlic, salt, pepper, and oregano. Combine with a whisk and pour in the diced potatoes. Stir to combine, making sure the potatoes are covered in the dressing.
  3. In a baking dish or roasting pan, pour the dressed potatoes so that they make a single layer. Bake at 400F for 45 minutes. Shake the pan after 20 minutes to make sure they are not sticking.
  4. Cover the roasted potatoes with the feta cheese and dill in the baking pan. Place back in the oven for another 10-15 minutes.
  5. Remove from the oven and enjoy with your favorite protein. This would be great with my grilled harissa chicken!
