Rosemary Lemon Chicken Kabobs: How to Make this Juicy and Tasty Chicken

I love a good kabob and these rosemary lemon chicken kabobs are no exception. While rosemary isn’t my favorite go to herb, I will often buy it when I need a pinch and end up with a whole lot left over and wondering what to do with it. And this recipe is perfect for using a bunch of it but not in an overwhelming way. It also gives it that long marinated flavor and pairs really well with the lemon for a well balanced flavor. And as an added bonus, the lemon really keeps the chicken juicy and from drying out.

Rosemary lemon chicken kabobs is also really simple to make. No need to marinate the chicken for very long and then you just arrange the chicken and vegetables on a skewer and grill away. I love an outdoor grill, but that’s not in the cards for me right now living on the second floor, so an indoor grill works fine. The indoor grill is actually growing on me, because it cooks way more evenly than most other grills have used IMO. You could also roast these in the oven. But however you cook them, make them with my crispy oven roasted potatoes because they both use a super similar marinade to make cooking and clean up easy. Plus, they are super delicious together.

Serves 4

Suggested Wine Pairing:

Try this with a zesty sauvignon blanc, like one from New Zealand.

Ingredients:

4 chicken breasts, cut into cubes

Juice of 1 lemon

2 tablespoons of rosemary, chopped

1 tablespoon of wholegrain mustard

2 tablespoons of olive oil

2 cloves of garlic, minced

8 ounces of mushrooms, halved

1 large bell pepper, cut into a large dice

1 onion, cut into a large dice

Instructions:

  1. Marinate the chicken breast in lemon, rosemary, mustard, olive oil, garlic, and salt and pepper for at least 30 minutes. Meanwhile, prep the vegetables and preheat your grill of choice. .
  2. Onto metal or presoaked wooden skewers, thread the vegetables and chicken. It should make about 8 skewers total.
  3. Cook on an indoor grill for about 12 minutes or 20 minutes in the oven or outdoor grill and serve with pita bread and/or your side of choice.
