Rosemary Roasted Sweet Potatoes: Make this Mouth-watering and Healthy Side!

Rosemary roasted sweet potatoes is the perfect side dish from everything from chicken to seafood. And this side dish is super comforting, simple to prep, and requires no babysitting from the outside of the oven.

This rosemary roasted sweet potatoes recipe uses only 6 ingredients including pantry staples like oil, salt, and pepper, so all you need to add is some sweet potatoes, fresh rosemary, thyme. This would be a perfect side to my rosemary lemon chicken kabobs or my super citrus roasted chicken. This would also be perfect as simple side to a likely already complicated Thanksgiving dinner.

And luckily, my rosemary roasted sweet potato recipe can be doubled or even tripled to feed a crowd and makes a perfect leftover. Not complicated but still delicious is the name of the game for this recipe!

Serves 4

Ingredients:

2 large or 4 small sweet potatoes, peeled and cut into routine sized squares.

3 tablespoons of olive oil

3 fresh sprigs of rosemary removed from the stalk

1 sprig of thyme removed from stalk and diced

2 teaspoons salt

1 teaspoon pepper

Instructions:

  1. Preheat your oven to 400F. Meanwhile, in a large mixing bowl, combine all of the ingredients and stir so that the potatoes are completely covered with oil and the spices are evenly mixed throughout.
  2. On a large baking sheet, evenly distribute the potatoes over the pan. Bake for 40-45 minutes, stirring or turning once at the 20 minute point. Remove from the oven and enjoy these rosemary roasted sweet potatoes because they are so yummy!
