Shrimp and Pineapple Fried Rice: Better than Takeout!

Shrimp and pineapple fried rice is something that might sound a little strange but is actually very good. I think it’s because some people get weirded out by using pineapples in a savory fashion. Likely, these people have been traumatized by a Hawaiian pizza situation. But, pineapple actually pairs well with spices and holds up well to cooking, so using it in a savory application is not that wild of an idea.

With this shrimp and pineapple fried rice recipe, I will prove that pineapple can hold it’s place in the savory world. The sweetness of the pineapple works wonders with the shrimp and the salt, spicy, and umami flavors of the sauce really bring it all together. Top it with some scallions and sriracha and this shrimp and pineapple fried rice is the perfect, healthy, and quick weeknight meal to wake up your taste buds!

Serves 4

Tools:

A wok would very helpful. If you don’t have that, use a frying pan with really high sides. Or if you would like to invest in one, I cannot say enough about this one from Williams Sonoma (and for less that $150!)

Ingredients:

2 cups of cooked rice. A day old is preferable.

1 pound peeled and deveined medium shrimp

1 bell pepper, diced

1/2 onion diced

2 cloves of garlic, minced

1 cup of pineapple, diced

1 tablespoon of each soy sauce, hoisin sauce, and sesame oil

3 chilis, minced

1 teaspoon of white pepper

Dash of fish sauce

Scallions and sriracha for some kick and the pretty

Instructions:

  1. In a hot wok, heat up 2 tablespoons of cooking oil of your choice and add the bell pepper and onion. Sauté for about 3 minutes before adding the shrimp, garlic, chilis, and garlic. Cook for an additional 2 minutes before adding the pineapple. Cook this mixture until the shrimp is nearly cooked through, about 3 more minutes.
  2. Add the rice, soy sauce, hoisin sauce, sesame oil, and fish sauce, and stir to combine. Allow the rice to heat up and don’t be afraid of it getting a little crispy.
  3. Once the mixture is heated through, top with scallions and serve with sriracha.
