My sizzling atomic shrimp fajitas with lime crema are the answer to a busy weeknight or a lazy weekend meal that pairs perfectly with a margarita. In less than 30 minutes, this crowd pleasing meal will be on the table with minimal effort but with high flavor and keep you coming back for more.
All you need to do is chop a few vegetables, quickly marinate some shrimp, mix up your lime crema, and quickly cook everything and there you have it, the perfect shrimp fajitas! You might just add this to you weekly taco Tuesday routine because it’s delicious and simple to make and will certainly have you coming back for more.
Serves 4
Atomic Shrimp Fajita Ingredients:
1 lb shrimp, peeled and deveined
3 cloves garlic, minced
2 Thai chilis, minced
2 peppers, sliced
1 onion, sliced
1 tablespoon of chipotle in adobo
2 teaspoons of cumin
1 tablespoon of chili powder
Dash cayenne
2 tablespoons of oil
Juice of 1/2 lime
Salt and Pepper to taste
For the Lime Crema:
1/2 cup of sour cream
Zest of 1 lime
Juice of 1/2 lime
1 teaspoon of salt
For the Fixings:
8 tortillas
Shredded cheddar cheese
Chopped cilantro, lettuce, jalapenos, tomatoes, and extra hot sauce if you like it extra spicy!
Instructions:
- First, get your shrimp marinating in a little bit of olive oil, salt, and pepper. Combine with the chilis and garlic. Allow that to marinate while you chop all of your vegetables and fajita toppings.
- Next, make your lime crema by combing the sour cream with the lime zest, juice, and salt. Stir to combine.
- Now it’s time to bring the heat! Over medium high heat in a cast iron or stainless steel skillet, heat oil before adding the peppers and onions. Season with salt and pepper and allow to cook, stirring occasionally, for about 5 minutes or until softened.
- Add the shrimp in the marinade to the onions and peppers and cook for 2 minutes before flipping and adding the chipotle, cumin, chili powder, and a dash of cayenne. Add the lime juice for the sizzling effect and moisture for a saucy finish.
- Remove the pan from the heat after another 2 minutes or so or when the shrimp is cooked through. Serve with all of the fixings and be sure to top it off with that lime crema to cook it all down!
