Slow Roasted Salmon: Try this Amazing Recipe with Brown Sugar and Dill

This was the first recipe that I came up with that made me think, “Maybe I really can cook?”. I adapted this slow roasted brown sugar citrus salmon from a recipe I had seen which included a curing time for the salmon. I could not be bothered by that, so I made my own version of it and much to my surprise, it worked and it’s really good. nd the bonus to this slow roasted brown sugar citrus salmon recipe is that it super easy and there is minimal prep time.

Because it’s so good, I started to make it for every party I threw or any potluck I was invited to and there were never any leftovers. Friends, family, and party goers alike always asked me for the recipe but of course I never wrote it down! So I just gave them the verbal instructions off the top of my head!

This slow roasted citrus brown sugar salmon pairs perfectly with green pea lemon risotto and works well with timing. Once you pop the salmon in the oven at a low heat, you can get to work on the risotto and everything should finish at about the same time. It’s the perfect menu for entertaining or a date night in.

Serves 4

Suggested Wine Pairing:

Slow roasted brown sugar citrus salmon pairs perfectly with a pinot grigio. However, if you prefer a chardonnay, that would work really nicely too.

Brown Sugar Citrus topping

Ingredients:

1 lb. salmon

2 tablespoons unsalted butter, melted

1 teaspoon salt

1/2 teaspoon pepper

1 clove of garlic, minced

2 tablespoons whole grain mustard

1 tablespoon brown sugar

2 tablespoons of dill, chopped

Zest and juice of 1 lemon

Prepping Slow roasted salmon

Instructions:

  1. Combine the melted butter with salt, pepper, garlic, mustard, brown sugar, dill, lemon juice and zest and stir to combine.
  2. Place salmon, skin side down in a baking dish and spread the above mixture over the fish. Allow it to rest while you preheat the oven to 175F.
  3. Once the oven is preheated, pop the salmon in and cook for 30 – 40 minutes, depending on the thickness of the fish. The flesh should be a light pink and just barely flaky when finished.
