I love combining two great recipes together for a surprising yet delicious flavor explosion and these spicy banh mi chicken tacos are the perfect recipe mashup for your next taco Tuesday. Not only have they got a spicy kick to get you going, but the toppings are fresh and healthy and it’s simple to make!
These spicy banh mi chicken tacos are the perfect quick meal for a weeknight that is definitely not a boring chicken recipe or the same ole tacos that make the rounds every week. So take your tastebuds on an adventure and try this spicy, yet healthy taco recipe next time you are looking for a quick and easy meal for taco Tuesday.
Serves 4 -6
Ingredients:
1 pound of chicken tenders
For the spicy banh mi Chicken:
2 tablespoons of soy sauce
1 tablespoon of sriracha
2 tablespoons of sesame oil
2 cloves of garlic, minced
1 inch of ginger, minced
1 Thai red chili, minced (optional)
Juice of 1/2 lime
For the taco:
8-12 tortillas
2 scallions, chopped
1 carrot, shredded
2 cucumbers, chopped
1 cup of napa cabbage, chopped
1 avocado, chopped
1/2 cup of cilantro
Sriracha, spicy mayo, and jalapenos to serve
Instructions:
- Begin by marinating the chicken tenders in soy sauce, gochujang, sesame oil, garlic, ginger, chili (if using), and lime juice.
- While the chicken is in marinating, chop the taco toppings. This comes together super quickly once the chicken hits the pan!
- Heat a non stick skillet over medium high heat and add the chicken. Spread it out evenly and pan fry for about 5 minutes each side or until the chicken is cooked through.
- Assemble you taco with the chicken, scallions, carrots, cucumber, cabbage, cilantro, and avocado. Add some sriracha, spicy mayo, and/or jalapenos for an extra kick!
