I love anything spicy and these spicy shrimp tacos are no exception. These are a great option once you have grown tired of the weekly chicken fajitas and it is a great way to mix up your next taco Tuesday. They come together super quickly and only require a quick and simple sauté on the shrimp and a few vegetables. The slaw really jumps in there to cool down the shrimp in the most refreshing way possible and doesn’t require any cooking, just mix it up and you are good to go. Enjoy these shrimp tacos with a lazy margarita or paloma on your next taco night!

You can opt to use a food processor or blender for the slaw dressing or you can mix it together by hand. Dealers choice.
Ingredients:
For the spicy shrimp tacos:
1 pound of shrimp, peeled and deveined
1 red pepper, sliced
1/2 medium onion, sliced
2 cloves of garlic minced
2 Thai red chilis
Juice of 1/2 lime
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cumin and chili powder
2 tablespoons oil, divided
8 – 10 tortillas or taco shells to serve
Toppings like pickled jalapenos, additional cilantro, lime, hot sauce, or tomatoes to serve
For the Creamy Avocado Slaw:
4 cups cabbage, sliced or bagged coleslaw mix
1/2 red onion, diced
2 avocados, seeded
1/2 cup cilantro, chopped and divided
2 tablespoons sour cream
Juice of 1/2 lime
1 teaspoon salt
1/2 teaspoon pepper
Instructions:
- Begin by quickly marinating the shrimp by combining one tablespoon of oil with lime juice, garlic, chilis, salt, pepper, cumin, and chili powder. Mix to combine in a mixing bowl and stir in shrimp.
- While that mixture marinates, combine avocado, sour cream, lime juice, 1/4 cup of cilantro, salt and pepper into a food processor or blender and blend. The result should be a creamy salad dressing consistency.
- Combine the avocado dressing with the cabbage, red onion, remaining cilantro in a mixing bowl and combine.
- Next, preheat skillet over medium high heat and add the remaining tablespoon of oil. Add onion and pepper and allow to cook until beginning to soften, about 5 minutes. Add the shrimp mixture and cook for another 5 minutes or until the shrimp is cooked through.
- Assemble the spicy shrimp tacos by adding shrimp, topping with the avocado slaw and a few jalapenos and enjoy like I clearly did.
