Spinach and Feta Pesto Pasta with Peas: Make this Easy and Delicious Meal

Here is another super easy pasta recipe for you that is not only delicious but very nutritious; my spinach and feta pesto pasta with peas. If you haven’t noticed yet, not only am I huge pasta fan, but I am also one of the world’s biggest feta fans. To me, it goes with almost everything. You can never go wrong with feta and lots of it.

The feta plays a huge role in this spinach and feta pesto recipe, replacing the parmesan cheese for a creamier version of the delicious green sauce. I am using a combination of both spinach and basil, but replacing the pine nuts with walnuts for a much richer and fuller flavor. The result is a delicious sauce, perfect for penne or rigatoni.

Keeping with the green theme, I am using frozen peas and fresh snap peas for more vegetables and also some protein. Peas are actually a great source of protein, so a key component to my vegetarian spinach and feta pesto pasta with peas.

Try this for your next pasta fix for an easy one pan meal that comes together as quickly and easily as boiling water!

Serves 4-6

Tools:

You will need a food processor for making the pesto.

Suggested Wine Pairing:

A tall glass of Pinot Grigio is perfect with this meal.

Ingredients:

18 ounces of good quality pasta, penne or rigatoni

1 cup of frozen peas

1 cup of snap peas, string removed and cut into thirds

Reserve 1/4 to 1/2 cup pasta water

For the Spinach and Feta Pesto:

1/2 cup of each – basil, spinach, walnuts, feta, olive oil

3 cloves of garlic

Juice of 1 lemon

Extra feta, crumbled for garnish

Instructions:

  1. To start, get your water on the stove for the pasta. While that is heating up, combine the ingredients for the spinach pesto in a food processor and pulse until smooth.
  2. Once the water is boiling add salt and the pasta and cook for 8 minutes. Add the peas and snap peas and cook together for 5 more minutes. Drain, reserving 1/2 cup of cooking liquid.
  3. Return the pasta and peas to same cooking pot and add the spinach and feta pesto. Stir to combine, adding the pasta water as need to coat all of the pasta with peas.
  4. To serve, divide between bowls and top with crumbled feta.
