Summer Tomato Pasta: Make this Yummy and Quick Recipe Tonight!

My summer tomato pasta recipe is succulent, sassy, speedy, and simple. This is the perfect summer recipe for a quick meal with minimal cleanup and it is so good. It will keep you coming back for seconds and maybe even thirds. This summer tomato pasta recipe will definitely make you wonder why you haven’t made this before and is a great way to use up any summer tomatoes from your garden’s bounty.

The sauce comes together in the same amount of time it takes to cook the pasta and with only a few ingredients and 2 pans. Better yet, you probably have most of the ingredients you need to make this on hand already. With 10 ingredients (not including salt and pepper!) and in about 20 minutes, you are going to have a delicious and addictive pasta meal ready to dig into!

Serves 6

Suggested Wine Pairing:

The zesty acidity and herbal notes in Sauvignon Blanc will match nicely with the basil and garlic, cutting through the richness of the olive oil and Parmesan.

Ingredients:

1/2 cup of olive oil

3 quarts of cherry tomatoes, halved. Multi-colored look stunning

2 teaspoons of salt

1 teaspoon of sugar

1/2 teaspoon of pepper

1 head of garlic, minced

2 red chilis, minced (optional, but you could also use red pepper flakes)

1 cup of parmesan cheese, shaved

1/2 teaspoon of oregano

1 cup of basil, chiffonade

18 ounces of good or even homemade linguine

1/2 cup of pasta water, reserved

Instructions:

  1. To make this lickity split, get that pasta water on high heat. Meanwhile, in a medium saucepan add olive oil, tomatoes, salt, and sugar over medium heat. Allow the mixture to cook for 5-10 minutes or until the tomatoes begin to release their juices.
  2. By now, your water should be boiling, so stir in that pasta and cook to the package instructions.
  3. While the pasta cooks, add the garlic, chili, and black pepper to the tomatoes.
  4. Drain the pasta and reserve 1/2 cup of water. Return the pasta to the pot and add the water back in. Top with the tomato mixture, half of the parmesan cheese, and half of the basil. stir to combine.
  5. To serve, add the pasta to a bowl and top with some more cheese and basil. Prepare for your taste buds to ignite and start making this weekly.
