Taco Bell Copycat Recipe: Vegetarian Crunchwrap Supreme

Vegetarians these days are pretty lucky because back in my day, there was no vegetarian crunchwrap. Either you ate the beef or you got a bean burrito, which was the only vegetarian item on the menu at Taco Bell back then. I don’t even think that chicken was an option and everything had beef, or excuse me, “taco meat” in it, even if it was not mentioned on the menu. Ahh, the good old days!

I mean, at least the bean burrito was only $0.89. I used to get 2 with a baja blast that I would spike with tequila to pregame and then head out to Friday night happy hour at The Boot. IFYKYK. But unfortunately, those days are over and a bean burrito will now run you $1.89 a pop. And, if you order a vegetarian crunchwrap supreme, swapping the beef for beans, that’ll cost you over 6 bucks. What is the world coming to?

Well, save yourself some money and make it your way at home with ingredients you can likely pronounce. Try my recipe for a vegetarian crunchwrap below and let me know how you think it compares to Taco Bell.

This recipe make one vegetarian crunchwrap, which could very easily be split or you can double this recipe for 2!

Ingredients:

1 large, burrito sized tortilla

1/4 cup of refried beans

2 tablespoons of shredded cheddar cheese

2 tablespoons of crumbled tortilla chips

1 tablespoon of guacamole

2 tablespoons of shredded iceberg lettuce

1 tablespoon of salsa

A couple of rings of pickled jalapeno peppers

A smattering of sour cream

Another 2 tablespoons of shredded cheddar cheese

1 small tortillas

2 tablespoons of olive oil

Instructions:

  1. Listen carefully, I arranged the above ingredients above on purpose. Take your large tortilla and microwave it for 10 seconds, then pile the refried beans, cheese, tortilla chips, guac, lettuce, salsa, jalapenos, sour cream, more cheese, and another small tortilla in the center of the large tortilla.
  2. You might need to smash this pile down a little to do this, but fold over the edges of the large tortilla to the small tortilla to make a seal.
  3. In a preheated pan, heat the oil over medium high heat and place the vegetarian crunchwrap folded side down. Press the tortilla down with a spatuala or top with another pan to weigh it down. Cook for about 3 minutes or until just crispy and flip. Repeat the process on the other side.
  4. Remove from heat, cut in half and enjoy!
