The Omelet to Eat all Omelets

This veggie and feta omelet is the solution to power you through your day. It’s built for two and combines the fat and protein from the eggs with filling vegetables like peppers, tomatoes, and spinach with some delicious and creamy feta to really punch it up.

In this recipe, I am using my Teta’s method and whisking the eggs with some yogurt to give the eggs that creaminess. I’m also using a silicone spatula to ensure all of the eggs are cooked to perfection. The exterior of the veggie and feta omelet will even get a slight crisp.

But fair warning, this omelet is massive, so you will need a little luck and a lot of patience to perfectly fold it over. It’s kind of like mastering the art of folding that perfect burrito. But even if it doesn’t fold to perfection, it will still taste great, so don’t let that stop you!

Serves 2

Ingredients:

5 eggs

2 tablespoons of yogurt

1/2 bell pepper diced

1 tomato diced

5 mushrooms, sliced

1 cup spinach

1/4 cup feta cheese

1 tablespoon olive oil

2 tablespoons butter

Instructions:

  1. Whisk eggs and yogurt with plenty of salt and pepper until well combined and there are no yogurt chunks left in the mixture.
  2. In a large, non stick, frying pan at medium high heat, add 1 tablespoon of olive oil. Sauté the peppers, tomatoes, and mushrooms with a bit of salt and pepper. After about 5 minutes or until the vegetable have softened, add the spinach until it is wilted or about 1 more minute. Set the vegetables aside.
  3. In the same frying pan, add butter and allow it to melt and coat the pan. Then, add the eggs and allow them to just set. Once the edges pull away, after about 1 minute, gently move the cooked eggs to the center of the pan. Allow the uncooked eggs to fill in their place. Continue this process until the eggs are 95% cooked.
  4. In the center of the eggs, line the cooked vegetables and feta cheese. Fold the omelet in half and allow to finish cooking and melt the cheese.
  5. Split the omelet in half and divide between two plates and enjoy!
