Wedge Salad with Yogurt Blue Cheese Dressing: How to Make a Low-Cal Version

Did anyone else watch MTV True Life after school? If so, do you remember the episode about the body builders in which one guy was just absolutely destroying iceberg lettuce before competition? I do not remember why he was doing this, but I couldn’t help but think, those heads of iceberg would be a lot better as a wedge salad with yogurt blue cheese dressing.

I guess the dressing adds a lot of calories that this particular body builder did not want, but, my recipe includes a homemade salad dressing with a yogurt base. So, its high in protein, much lower in calories than the original, but still super delicious.

And this wedge salad with yogurt blue cheese dressing makes the perfect side dish to so many meals, not just more iceberg lettuce! I love this salad with barbecue chicken pizza and I make extra dressing for a little crust dunk. I am not a fan of steak; I am a recovering vegetarian afterall, but I know the classic steakhouse pairing of a steak and wedge salad is popular for a reason.

Not only is it delicious and low cal, but it’s also super easy to make. Most salad require tons of ingredients and lots of chopping, but not this one. You just make some rough chops to that iceberg and call it a day!

Makes 4 wedges

Ingredients:

For the wedge salad:

1 head of iceberg lettuce, core removed and cut into fourths

1 tomato, finely diced

1/2 red onion, finely diced

4 strips of bacon (optional), cooked and finely diced

For the yogurt blue cheese dressing:

1/4 cup blue cheese, crumbled

1 cup of yogurt

Juice of 1/2 lemon

1 teaspoon of vinegar

1 teaspoon of salt

1/2 teaspoon of pepper

2 scallions, diced

Instructions:

  1. For the wedge salad, place one wedge onto four different plates. top with tomato, red onion, and bacon (if using).
  2. To make the yogurt blue cheese dressing, combine all of the ingredients into a jar and shake it like a polaroid picture.
  3. Pour the dressing over the top of wedge salad and enjoy!
