Whole Roasted Cauliflower with Whipped Feta and Herb Germolata

You need to try this whole roasted cauliflower recipe, deemed “the best cauliflower I have ever had” by my man. It’s sure to please meat eaters and vegetarians with its substantial texture, spicy bite, and delicious feta and herb toppings. Make this today with spicy grilled harissa chicken and you will have no regrets.

Roasted Cauliflower

Serves 4

Tools:

You will need a blender or food processor for both the whipped feta and herbed gremolata.

Ingredients:

For the whole roasted cauliflower:

Whipped Feta

1 whole head of cauliflower

3 garlic cloves, minced

1 Thai red chile

1/4 cup olive oil

1 teaspoon of salt

1 teaspoon pepper

Herbed Gremolata

For the whipped Feta:

1/2 cup feta

1/4 cup plain yogurt

Pinch of pepper

For the Herb Gremolata:

1/4 cup of each – parsley, cilantro, and dill

1 teaspoon salt

1/2 teaspoon pepper

Instructions:

  1. Preheat the oven to 400F. While the oven is heating up, trim off the green leaves and slightly core the center of the cauliflower. Massage that cauliflower with salt, pepper, garlic, chili, and olive oil. Pop that biatch in the oven on a lightly oiled roasting pan for 45 minutes.
  2. Meanwhile, prepare your gremolata by adding all ingredients to a blender or food processer and blending until smooth. Remove to dish.
  3. No need to rinse the blender to make the whipped feta. Add all ingredients into the same blender or food processor and blend until smooth.
  4. Remove the roasted cauliflower from the oven and drizzle with about 2 tablespoons of each and serve the rest on the side with some pita bread and relax knowing that you have created a treasure.
