Chicken fajita pasta is a flavorful and comforting fusion dinner that combines the spicy flavors of chicken fajitas with the cheesy comfort of pasta. It brings together spicy and smoky fajita seasoning with savory sauteed onions and bell peppers, topped off with a creamy and cheesy sauce that will keep you coming back for more.
This chicken fajita pasta is the perfect meal for when you don’t know what to cook, but you know you want something comforting, spicy, and easy to make. Top it off with some pickled jalapenos and a sprinkling of cilantro to tie it altogether and you have yourself the perfect pasta dinner!
Serves 6
Chicken Fajita Pasta Ingredients:
1 tablespoon of oil
2 chicken breasts, sliced
1 onion, sliced
2 peppers, sliced
1 box of penne, rigatoni, or my personal favorite, elbows
1 tablespoon of flour
2 cloves of garlic, raw or roasted, minced
2 Thai red chilis, minced or 1/2 teaspoon of chili flakes
1 teaspoon of cumin
2 teaspoons of chili powder
2 tablespoons butter
1 cup of milk or cream
1 cup of each; shredded cheddar and mozzarella
2 tablespoons chopped cilantro
2 tablespoons chopped jalapenos
Salt and pepper to taste
Instructions:
- In a skillet over medium high heat, add 1 tablespoon of oil and brown the chicken for about 5 minutes. Once it is no longer pink, add the onions, peppers, salt, and pepper and saute for about 10 minutes.
- Meanwhile, cook the pasta according to the package instructions.
- Back to the chicken, add the garlic and chilis and cook for another minute before stirring in the cumin and chili powder. Remove from the skillet.
- In the same skillet, add the butter and whisk in the flour making a roux. Add the milk and season with salt and pepper. Add the cheese and allow it to melt.
- Drain the pasta and mix it with the chicken. Then pour over the cheesy sauce and stir to combine.
- Serve your chicken fajita pasta immediately with cilantro and jalapenos to top.
