It’s hard not to love a classic caesar salad, but it can get even better when you kick it up a notch with my parmesan crusted salmon caesar salad. This somewhat deconstructed salad will bust through your caesar craving with a crispy, but simply oven roasted salmon and some delicious garlicky, sourdough breadcrumbs.

Try my parmesan crusted salmon caesar salad with a chardonnay, which will complement the richness of the salmon and creaminess of the dressing.
Parmesan Crusted Salmon Caesar Salad Ingredients:
2 skinless salmon fillets, about 6 ounces each
3/4 cup of grated parmesan cheese
1 head of romaine, chopped and washed (love my Ikea salad spinner!)
1 small sourdough baguette
1/2 cup of plain greek yogurt
Juice of 1/2 lemon (about 1-2 teaspoons)
4 cloves of roasted garlic
1/4 cup of panko breadcrumbs
1 tablespoon of butter
Salt and pepper to taste
Instructions:
- Preheat your oven to 400F. Meanwhile, slice the baguette lengthwise and butter one side and then spread the 2 cloves of roasted garlic over the other side. Sprinkle about 1/4 cup of parmesan cheese over the garlic and fold the baguette back together like a sandwich. Wrap in foil and toss in the oven.
- Meanwhile, take another 1/4 cup of parmesan cheese and combine it with the panko and salt and pepper to taste. Gently pat your salmon dry and roll in the parmesan/panko mixture. Place the salmon on a oiled baking sheet and bake for 10 minutes.
- While the salmon and garlic bread is cooking, combine the greek yogurt with 2 cloves of garlic, remaining parmesan cheese, lemon juice, salt and pepper and mix together in the bottom of a salad bowl. Add the romaine lettuce and toss to combine.
- To serve, add the salad to a plate, top with the salmon and chop up the garlic bread for some delicious croutons.
