My roasted salmon with pea puree is delicious and looks elegant but it is so simple and easy, you can throw this together in less than 30 minutes. Sure, it looks impressive with the tasty flare of green and the perfectly roasted salmon, but it comes together with minimal effort and maximum impact!
The salmon is simply roasted with lemon and dill and fresh or frozen peas are combined with more lemon, some mint, and touch of cream for the most delicious splash of color and flavor that pairs perfectly with the pink salmon. If we truly eat with our eyes first, this meal offers a stunning picture an even more sumptuous taste.
Because of this, you could make this dill roasted salmon with pea puree for a date night, but it comes together so quickly that you could also make it on a weeknight. It’s a versatile dish that can pair with any of your plans!

Suggested Wine Pairing:
Try this with a berry aroma Pinot Noir. The acidity of this wine will balance the richness of the salmon and peas while it sharpens the overall flavors.

The pea puree is best made in a blender or food processor for the ultimate velvety smoothness.
Ingredients:
1 & 1/2 pounds of salmon, cut into 4 fillets
30 ounces of frozen peas (one bag)
4 cloves of roasted garlic
1/2 cup of cream
1/4 cup of chopped mint leaves
Juice of 1 lemon
2 tablespoons of chopped dill
Olive oil for drizzling
Salt and pepper to taste
Instructions:
- Preheat your oven to 400F. Meanwhile dry the salmon and place skin side down on a baking sheet. Liberally salt and pepper the fish and then add the dill and half of the lemon juice. drizzle with olive oil and bake for 8-10 minutes depending on thickness of the filet.
- Meanwhile, heat the peas according to the package instructions and drain. Add the peas to a food processor or blender with salt and pepper, roasted garlic, cream, and mint. Pulse to combine and run for about a minute to smooth the puree.
- To serve, swipe the puree across a plate and top with a perfectly roasted salmon filet.
