Better than Takeout: Try this Sun-dried Tomato, Feta, and Arugula Pizza

Pizza, especially non traditional pizzas, can get a bad wrap, but my sun-dried tomato, feta, and arugula pizza is sure to unite the pizza traditionalists with those that like the Hawaiian. I am not judging anyone, all I am saying is that this delicious sundried tomato, feta, and arugula pizza cannot be denied.

My sun-dried tomato, feta, and arugula pizza is a little off the beaten path because there is no tomato sauce. Instead, I am using a garlic and olive oil base that pairs perfectly with the sun-dried tomatoes. Next, I add salty feta, healthy arugula, and mozzarella cheese just to top it all off and it give it that cheese pull that all pizza needs. The blend of all of these ingredients make for the perfect pizza that is delicious but still feels healthy enough to devour more than 2 slices. Give this sun-dried tomato, feta, and arugula pizza recipe a try; you will not regret it.

Ingredients:

Pizza dough of your choosing; homemade or store bought

1 head of roasted garlic

1/4 cup olive oil

1/2 teaspoon of freshly cracked pepper

1/2 teaspoon of coarse salt

6 ounces of feta cheese crumbled

1/2 cup of sun-dried tomatoes, sliced

3/4 cup of shredded mozzarella

4 ounces of arugula

Instructions:

  1. Preheat your oven to 400F. While the oven preheats, make your garlic pizza sauce by cutting the the root end of the roasted garlic off. Squeeze the garlic cloves onto a cutting board. Top the garlic with the coarse salt and using the side of your knife, scrape the garlic to make it into a paste. Put that into a small mixing bowl and add the black pepper and olive oil. Whisk to combine.
  2. Time to decorate that pizza! Spread the garlic sauce liberally over the dough. Top with the arugula (on the bottom helps prevent it from burning) and then add the mozzarella. On top of the mozzarella, add the feta and sun-dried tomatoes.
  3. Cook in your 400F preheated oven for 12-15 minutes or until the sun-dried tomato, feta, and arugula pizza crust becomes to your crispness desired.
